A moist washed rind artisanal cheese, produced in the village of Gevrey-Chambertin in the Bourgogne region of France. It's red rind is typical of water washed rind cheeses. Ami du Chambertin is semi soft, with a fat content of 50%, and is derived of cow's milk.
