Meatloaf

1 lb Ground Sirloin (lower fat)
½ Medium Onion , chopped finely
½ Bell Pepper, chopped finely
¼ Cup Saltines (more if needed for fimness)
1 Egg
1/3 Cup Ketchup
1/8 Teaspoon Garlic
1 Tablespoon Heinz 57 Sauce

Mix together, form into a loaf and bake at 350º for 1 hour.

A Family recipe. Very basic recipe.
Italian seasonings can be added for variety.

My stepmother made the first meatloaf I ever had, and after hers, I can't imagine why it's supposed to be such a boring food, according to pop culture. This is her recipe.

1 pound ground beef
1 egg
1/4 cup chopped green pepper
1/4 cup chopped onion
several dashes Worcestershire sauce
catsup
20 to 25 crackers, crushed finely
salt and pepper to taste

Combine the first six ingredients until thoroughly mixed. Add crushed crackers and salt and pepper; mix well. Form into one-inch-thich round loaf and place in iron skillet (standard loaf shape in loaf pan will also work). Cook at 350 degrees for one hour.

Rose's Italian Meatloaf:
serves 6 - 8

  • Make one batch basic Italian ground beef mixture
  • Add one cup cooked rice
  • Shape into 2 thin rectangles place with a space between them in a baking pan with sides (the type of pan used for lasagna)
  • place potato chunks around the meat
  • pour 1 can of peas around the meat, including the liquid
  • pour 2 cups of canned or homemade spaghetti sauce over it all
  • bake (covered with foil) at 350 degrees for about 1 hour

Meatloaf is a good way to stretch a small amount of beef and most of us tend to eat much more meat than we really need (not that we really NEED any). This meatloaf is really good if you like me are not really a vegetarian but just don't eat meat. I'll eat the potatoes and peas and leave the meat part for the rest of the family.
