Olive Oil Mashed Potatoes

I absolutely loved the movie Under the Tuscan Sun that came out a few years ago. After I saw it, I got on this whole Mediterranean kick, looking for every recipe I could find with olive oil in it. While some of them weren't exactly made for everyday dining, I did manage to find this recipe for mashed potatoes that works beautifully.

Olive Oil Mashed Potatoes

Serves 6.

Ingredients

• 3 pounds red potatoes.
• 1/3 cup heavy cream.
• ¼ cup extra-virgin olive oil.
• ¼ cup snipped fresh chives.
• 2 tablespoons unsalted butter, room temperature.
• 2 tablespoons white wine vinegar.
• Salt and freshly ground black pepper.

Directions

Put the potatoes in a pot of salted water and bring to a boil. Boil until tender, about 20 to 30 minutes. Drain and put back in saucepan.

Heat the heavy cream in a small saucepan until warm. Add the cream to the potatoes. Over low heat, add the olive oil, chives, butter, and vinegar and mash with the potatoes and cream. Season to taste with salt and pepper.
