A small town in Belgium, in the province of Liège, very near the language border.

Famous for its Herve cheese, known in the Netherlands as 'Limburgse kaas', a soft cheese with the strongest smell you will ever meet. This is the kind of stuff you have to pack airtight in two or three layers of plastic and still the smell comes through. A smell that, I might add, is pretty disgusting. Compared to this, things like the durian (an onion-and-pineapple-flavoured monstrosity from China) are a piece of hotel cake.

It's an acquired taste. (I love it.)

The secret behind Herve cheese is its 'red' or 'munster' type and excessive ripening, enhanced, according to legend, by the same process used in casu marzu.
