Don't let the butcher sell you the whole thing; get a couple of pounds, trimmed, unless you're feeding more than a half dozen people. Cut slits in the top each half inch or so, and put a couple of slivers of garlic in there. (Three garlic cloves should be about right for the whole thing.) Marinate in:

• 1/2 cup of soy sauce
• 1/2 cup of port wine
• 1/8 cup of olive oil
• 1/2 tsp. of hot sauce
• 1 bay leaf
• 1 sprig of thyme
• 1/2 tsp. of pepper

Marinate in the refrigerator for at least 6 hours. Preheat the oven to 400 degrees F. Put some Pam on the cooking pan, and toss the marinade.

Cook it for 50 mins. and let it sit for 15 mins.
