| A fan in the back of a gas or electric oven helps make it more efficient. By forcing air to circulate around the oven, convection takes place more readily. As well as cooking food faster, there will be a smaller temperature difference between the top and bottom of the oven. If you are buying an oven, make sure it's fan assisted. |
