This recipe, like many I have loved and made my own is a highly modified version of a recipe found in my mother's old 'Cook's Notebook', which was a kind of 'Write Your Own Cookbook' she filled up over a few years of travelling.
These cookies are VERY good, and if you do 'em just right, are all chewy and soft on the inside, and just crunchy enough on the outside. The caramel essence makes them taste like Reese's Peanut Butter Pieces. This is of great significance in Australia where Reese's products are hard to find.
Ingredients:
Method:
Beat butter/margarine, sugars, vanilla and egg until light and fluffy.
Do a little dance, make a little love, and get down tonight.
Sift flour, baking powder, salt stir into butter mix. If you don't sift it you'll get lumps of baking powder, and explode like a seagull. I saw it in a movie once.
Mix in the M+M's but be careful not to crush them up too much if you're using a power mixer.
This next bit is the hardest part to get right so I'm giving it some emphasis:
I'd give you all sorts of reasons about raw eggs and stuff and why you shouldn't eat the mixture, but I know and you know that it tastes better BEFORE you bake it. Bake at least half of it, or else you can't save any for later. Ok, just eat it all, but I warned you about the exploding part.
Drop mixture in cookie sized blobs onto a greased tray.
Bake in a 350°F (180°C) oven for 12-14 mins, or until golden brown. It's ok if they're still VERY squishy when they come out of the oven, as they will firm up as they cool.
Use them to lure members of the opposite sex back to your filthy lair. There's no telling what horrors they'll happily submit to while under the influence of chocolatey peanutty goodness.
