Seven minute frosting

Good for a quick homemade, lower fat (though still high calorie) frosting. Make this right before you want to use and serve it as it will begin to breakdown after a few hours.

Seven Minute Frosting

Combine egg whites, sugar, water, cream of tartar and salt in the top of a double boiler. Set over simmering water and beat with an electric mixer for about 5 minutes or until soft peaks begin to form.

Remove from heat and stir in the vanilla. Keep beating until froasting is stiff enough to spread. Use immediately. This looks like a lot but use it all; it is enough to fill and frost the cake.

*Goes well on Devil's Food Cake.
