Aged clarified butter used in
Moroccan cooking. It is similar to the
Asian version "
ghee", which used in
Indian cooking. One year is a common age, but the
ultimate smen is supposed to be
seven years old.
If you can find seven year old smen (and are willing to try it) you should combine it with a lucky couscous dish made with seven vegetables and seven spices.
