An aunt of mine, health conscious and at the time, I thought, totally barmy, once told me that I didn't need gravy on my mashed potatoes. "All it is," she said smugly, "is grease and flour. It's nothing but fat." She thought she was turning me off to it, I guess. Since that time, I saw my middle expand and my cholesterol shoot up. Hell, I had to do something. My dad died when he was 33 from heart disease so when I hit 28 I decided to become a vegan. One of the first things I had to come to grips with was one of my biggest comfort foods -- mashed potatoes and gravy. Thank goodness I found this one. Fix this, invite me over, and we'll eat it together. It's simple. All you do is combine everything and simmer it for 20 minutes until it looks right.
1/3 cup, soy margarine
4 tablespoons, unbleached white or wheat flour
1 white onion, chopped
4 cloves of garlic, minced
3 cups, mushrooms sliced
1/2 cup, soy milk
3/4 cup, vegetable stock
3 drops, liquid smoke
1 tablespoon each, dried parsley, sage, and rosemary (no thyme this time, Mr. Simon)
sea salt and pepper to taste
That's it! Now make some mashed potatoes and invite me over!
