Exchange System
The exchange system is based on six
food groups
. They are as follows: the
starch/bread group

vegetable group

milk group

fat group
. Each group contains foods with approximately the same amounts of
protein

carbohydrate
,
fat
and
calories
, based on a certain portion
size
.
The exchange system is not an exact science. Therefore, often, "
close enough
is
good enough
."
When first
learn
ing the exchange system,
weigh
and/or
measure
the amount of food specified for each meal.
After you have a
basic understanding
of the exchange system, use a
scale
and
measuring cups
one
day
per
week
.
