In a blender, purree the following:

• 1 8oz package of silken tofu (no other style will do for this recipe)
• 2 Tbsp lemon juice
• 2 Tbsp vinegar
• 3 Tbsp canola oil

It doesn't taste exactly like dairy sour cream if you eat it by itself, but then who the heck eats spoonfuls of sour cream by itself. Put it in a burrito where it belongs!
