To sanitize something is to make it sanitary by cleaning or sterilizing, often to remove bacteria. It also has a somewhat more sinister connotation of removing unpleasant or undesired attributes to make something more palatable. This might involve something such as busing homeless people out of an area before a foreign dignitary comes to visit, or doublespeak like referring to genocide as war or dissidents as terrorists.
