Rose's Italian Meatloaf:
serves 6 - 8

  • Make one batch basic Italian ground beef mixture
  • Add one cup cooked rice
  • Shape into 2 thin rectangles place with a space between them in a baking pan with sides (the type of pan used for lasagna)
  • place potato chunks around the meat
  • pour 1 can of peas around the meat, including the liquid
  • pour 2 cups of canned or homemade spaghetti sauce over it all
  • bake (covered with foil) at 350 degrees for about 1 hour

Meatloaf is a good way to stretch a small amount of beef and most of us tend to eat much more meat than we really need (not that we really NEED any). This meatloaf is really good if you like me are not really a vegetarian but just don't eat meat. I'll eat the potatoes and peas and leave the meat part for the rest of the family.
