2 cups
whole wheat flour
3/4 cup
unbleached white flour
1 tablespoon of
baking powder (
not baking soda)
1/2 teaspoon
salt
1 1/2 cups
soy milk
1/2 cup
vegetable oil
1/2 cup
unrefined sugar
1/2 teaspoon
vanilla
include
nuts and
berries as desired
Preheat the oven to 400 degrees
Farenheit. Mix the dry ingredients well, then mix in the wet ingredients. Lightly oil a
muffin pan with room for 12 muffins. Cook for about 20 minutes or until lightly or
golden brown, depending on how crispy you like the outsides. You can let them
cool, but eat some while they are still damn hot with
margarine and
jam because its good that way.
